  1. Add the flour, sugar, cocoa powder, baking soda, baking powder, and salt to the bowl of a stand mixer. Mix using a paddle attachment.
  2. Add the eggs and coffee to the dry ingredients and mix until you have a smooth paste. Scrape down sides of bowl as needed.
  3. Slowly add the buttermilk, oil, and vanilla to the dough while the mixer is on. Adding liquids slowly will help prevent lumps from forming.
  4. Large two eight inch cake pans.
  5. Distribute the dough between the molds. The dough should be about 3/4 the height of the sides of the pan. Don’t worry if the dough seems a little runny, it should be!
  6. Bake for 45 to 55 minutes in a 350ºF oven or until the center of the cake springs back to the touch. Cool the cakes and then frost them with your favorite dark chocolate frosting.
