- Add the flour, sugar, cocoa powder, baking soda, baking powder, and salt to the bowl of a stand mixer. Mix using a paddle attachment.
- Add the eggs and coffee to the dry ingredients and mix until you have a smooth paste. Scrape down sides of bowl as needed.
- Slowly add the buttermilk, oil, and vanilla to the dough while the mixer is on. Adding liquids slowly will help prevent lumps from forming.
- Large two eight inch cake pans.
- Distribute the dough between the molds. The dough should be about 3/4 the height of the sides of the pan. Don’t worry if the dough seems a little runny, it should be!
- Bake for 45 to 55 minutes in a 350ºF oven or until the center of the cake springs back to the touch. Cool the cakes and then frost them with your favorite dark chocolate frosting.
