Blueberry Yogurt Muffins


  • 1 1/4cup (156-160g) Flour
  • 1 teaspoon (4g) baking powder
  • 1/2 teaspoon (2g) baking soda
  • 1/4 teaspoon (1g) salt
  • 1/4 cup (30g) ground Almonds (optional)
  • 2 eggs
  • 1/2cup( 120ml) Vegetables oil
  • 3/4 cup (150g yogurt)
  • 1 tsp vanilla extract
  • 1/2 cup (100g) sugar
  • 100g Blueberries for toppings


In a Mixing Bowl combine and whisk eggs, sugar, yogurt, oil, vanilla extract until smooth. Sifted together flour, baking powder, baking soda, salt.
Combined dry mixture and liquid mixture and whisk until well combine. Add ground Almond and beat again.
Scoop batter and fill muffins cup. Top with blueberry. Baked 18-20 minutes in preheated oven 170 grad Celsius.
